Why is it incorrect to say
"Are you inferring that I'm a liar ?"

There may be a much less usual situation in which this is possible, but in virtually all cases we would say "implying" instead of "inferring" in this kind of sentence.

Are you [implying / hinting / suggesting] that I'm a liar? is usually what is meant.
