I think we don't use that each of which eats!I think it is not right

2. I would reword as: Each of the three cats eats a fish.

Both are correct provided you finish the sentence appropriately.
Three cats each eat three rats. How many rats were eaten in total? (Nine.)
Three cats each of which eats seven rats won't be hungry for long.
As illustrated above, the first phrasing is commonly heard in elementary arithmetic problems.
In the second phrasing each is the beginning of a relative clause; not so in the first.

Both these sentences are awkwardly phrased and will not pass muster in a test of sentence correction (for instance the GMAT)
