Do you know Jones ? ok if using it to identify a man you usually use only the last name with

Do you know Jones' ? no

The may be used to emphasize that this is the "one-and-only" as opposed to a pretender or to one less famous. A(n) could be ok if you know there's more than one of that name and you aren't sure which one.

However, in addition, you could also say:

Do you know the Jones'?

... if you mean "the family called Jones".
