Up until vs until

1 She didn't engage in sexual relations up until her wedding.
2 She didn't engage in sexual relations until her wedding.

one more thing; Is the part in brackets optional?

1He's one of the nicest people you'll ever (get a chance to) meet.

If you use UP UNTIL or just UNTIL I'd say both. but which would you use?

Probably #2. 'Up until' suggests a certain eagerness or anxiety that is inappropriate here...in spite of the context.
