Up to/until

Hello
I don't understand what's the real difference between up to and until, is there any, regarding the use? Is it just a matter of which one sounds better?

"Until" relates to time.

"Up to" relates to any quantifiable thing:
I'd be willing to pay up to $25,000 for that car.
Fill it up to the top.
She waited for him up to/until the last minute.
