Up to here with smt?

I need your help with the following completions
1. I need an assistant – I’m up to ____ with work.
A.my eyes B.my ears C.here D.All are correct
My teacher said all were correct but I am really not sure if this is a correct answer.
I've looked up the dictionary and found out that "up to my eyes/ears" goes with preposition "in", not "with". But besides, I find nothing to do with "here". I wonder if "up to here with something" would make sense.
2. Wow-flowers! I love them, thanks – they are absolutely ____
A.Stunning B.gorgeous C.beautiful D.all are correct
3. Phew! It’s too hot to go outside, it’s absolutely ____
A. Boiling scorching baking all are correct
I think that all are correct in both sentences 2 and 3 but I'm not sure.
