Up to her ears?

I'm writing a short story for my english class, and was wondering if you could use the phrase "With happiness all up to her ears, she..."? Is that just weird, or is it a correct phrase that actually can be used?

Would appreciate a quick respond since it has do be finished by tomorrow.
