Uncountable noun possible after pronoun "what" in exclamation?

Hi. There is a part in the lyrics of the hymn, which is written by Charles Wesley, called "Father, I Stretch My Hands to Thee" which consists of the words "What pain, what labor, to secure" and I wonder if it is possible to use an uncountable noun after the pronoun "What" in what looks to be an exclamation as in "What pain" and "what labor." I think the two words "pain" and "labor" are uncountable in "What pain" and "what labor." Thank you in advance for your help.
