Yes. This is yet another example of the writers playing with the language. "uncork" is not typically used in this context even though it's clear what Chloe means.

Uncorks - yes, reveal. Just like opening a bottle of wine. More like Champagne, really, with the idea that once it's opened you can't put the contents back in.

Flying below the radar is (obviously) a metaphor derived from jets and planes in wartime. It carries the idea of avoiding detection.
