You are quite right. The knight can be represented in many ways and is then understood by its position on the board and the moves that it makes. Here it is as a walrus!

There may be variations; the horse may be given a rider, the horse may be made to look more like a dragon, the horse's head may be so stylized that it only suggests the shape of a horse's head, but it is always based in some degree on a horse's head.
