Is unbutton itself correct?
The button of my coat unbuttoned itself because I had put on too much weight.

No. I say 'came unbuttoned'. (My coat came unbuttoned.)

However, you've got 'button' in the sentence already, and 'button came unbuttoned' sounds bad because of the repetition, so in that case use 'came undone' as suggested above
