Type of usage in this example

He shouted 'help'
'Help', he shouted.

With speech why can we switch the subject and (predicate) but not in standard writing?




He tells stories.
stories he tells





Is this ok as written?

The performance was good, and there was a sense we were experiencing something new;

a sense we were witnessing someone pushing boundaries and defying conventions.

My feeling is that it's largely a matter of convention. We do it because we all do it.
