two questions in need of answers

1. If I wanted a piece of paper to write on or an extra assignment sheet, can I say the following? Are all three acceptable given the right context?

Give me an extra piece/sheet of paper.

Give me an extra paper.

Give me a paper.

2. Are there any other sentences/expressions that I could write to say the same thing?

The other two are not correct.

As to the second answer/sentence to Question 2, Can all the following be correct?

What date is it today? (We also use the expression "What day is it today?" and may sound too trite if used too many times together, I think.)

Which date is it today? (I think this is OK since it is asking a date among numerous dates in/on the calendar.)

I wanted a piece of paper to write on Say 'Can I have a piece of paper, please' if you want a blank sheet of paper.

or an extra assignment sheet If there is writing on the extra paper you want, say 'Can I have another page, please?

'What day is it today' is ok but you will probably be answered 'Tuesday' rather than the date.
