Two Questions About This

“Look,” he says with all sincerity, “all I can say is I’m sorry. Especially about embarrassing you!"

I have two questions about this:

1. Is it okay to not have single quotes around "I'm sorry"?
2. Is it okay that I'm ending the sentence with a full stop, instead of a comma, and beginning the next sentence with "especially?" I want there to be more of a pause betweeen "I'm sorry" and "especially" than a comma would offer.
