two not-so-clear questions

1. When we are using adjecitves like "different" in front of variable?? nouns like pronunciation and language, is it always the case that the countable part of their variable nature will be used like this?

2. What is the difference between the question forms "would it differ?" and "would it be different?"?

'He differs from the way the music is written.' I wouldn't say this if I were speaking during his playing.

'He is differing from the way the music is written.' I would say this if I were speaking during his playing, which is the context I gave
