I'm showing my age I suppose. Following your comment, Mr Micawber, I did a Google search and , indeed, the IUPAC ( the International Committe which decides the correct naming of chemical compounds) have ruled that the AE version ,'sulfur', should be used - - and of course all its derivatives.

I think it's OK grammatically but there may be other opinions.

"The mercaptans are transformed.........and are partially removed." - We don't need to repeat the 'are', though you can if you want to.

It's not the disulphides which are partially removed - - which is what you would be saying if you put it in at that point.
