Trans fats vs trans fat

From a magazine:

1. Large population studies have shown that people with a high intake of trans fats have higher levels of heart disease.
2. Weight for weight, doctors believe that trans fat is much more dangerous than saturated fat.
3.. Research has shown that replacing trans fats with good fats could cut your risk of heart attack by a whopping 53 percent.

Since trans fat is uncountable, I guess trans fats means the different types of trans fat. I am not sure when to use which. Can I

a) change trans fats to trans fat in 1 and 3
b) change to trans fats in 2 ?
