Both "tourism" and "tourist" are nouns. The adjective form is "touristic", therefore I'd go with "Touristic sites".

In English nouns may be used as adjectives, the first modifying the second. Both tourist sites and tourism sites are proper, one focusing on the individual, the other on the industry. Touristic sites is a bit awkward. You will probably hear "tourist sites" most often, at least in America.
