I wrote the sentence to mean, "we easily defeated the team by 200 runs". Then, is that correct?

You could say (informally, I would imagine)

We took them apart

We tore them apart

etc

If you wish to include the score by which you beat them by, try:

We beat them by 200 runs

You have to decide what you want to include. That will determine which option you pick
