Both vegetable and game are countable in your contexts:

Can eating too many vegetables make you gain weight?
Playing too many games can affect your future life. (Too much gaming can affect your future life.) Gaming is uncountable.

The thing is that to me "too many vegetables" sounded like as if it were too many different sorts of vegetables. Besides, I goggled "eating too much vegetables" and what really confused me was that one of the first links that came up was from 'Yahoo UK& Ireland' which really made me rack my brain for a second.
