She's the only one to have this car.
Are they correct?

I don't think it has a name. It's just that you can use an infinitival expression after a noun phrase that signifies something unique. This includes "the first", "the last", "the poorest (man)", etc., as well as "the only", which you have shown. "ever" sometimes occurs before the infinitive in this pattern.
