In English, is it common to start a sentence by saying:


"I hope that this finds you well." or "I hope to find you well."

" I think you mean "start a letter", not "start a sentence", because each is a whole sentence already. The second one doesn't sound familiar to me, but the first one is indeed a very old-fashioned formula for starting a letter. In today's world we would not use either of those (unless we don't mind showing how little we care about the person we're writing to ).
