three sentences

Could you please check my sentences if they are grammatically correct, if I used the right vocabulary, and if I may use (-) in the first two sentences?

There is so much truth in your statement - thinking happy thoughts has the power to counteract sad thoughts.

Your letter had magic powers on me - it mitigated my pain and lifted up my spirits.

My favourity food is pancakes spread with honey and heaped up wiht strawberries, blueberries, and blackberries.
