Are you sure you mean single compound words consisting solely of three or more nouns, as opposed to noun phrases, which are not compounds at all but syntactic constructions?

The vast majority of compound nouns consisting of just nouns are noun + noun. Lexicalised noun + noun + noun compounds are extremely rare. One that comes to mind is "singer-songwriter". Is that what you meant?
