But I still don't get it. Why isn't "kinds" the proper word for the relationships among these plants?

Collocation and usage, of course: agricultural products come in hybrids and [url=http://en.wikipedia.org/wiki/Variety_(botany)] varieties[/url], that is all. Kinds is a very general word.
