Hi, I'm trying to write something and am stuck! Does anyone know if the correct sentence is:

- 'those of discerning taste'

- 'those of a discerning taste'

- 'those with a discerning taste'

- 'those with discerning taste'

Any of these phrases is possible, depending on the context:

- 'those of discerning taste'
- 'those with a discerning taste'
- 'those with discerning taste'

Either of or with (a) can be used. The choice depends on the context. It seems to me that of is slightly more formal, or perhaps more frequent in British English.

Here are two examples:

The club members were people of (with) discerning taste and deep pockets.

We are seeking applicants with a discerning taste in high fashion.

(Side comment: your examples are not sentences because they don't contain a verb.)
