those refers to what

Broadly speaking the major internal organs are attributed functions in Chinese medicine that coincide partially with those accorded to them by Western medicine. (Wiseman. N. Dictionary of Chinese Medicine. Changsha. 2006: 59)

My question is those refers to what in the above sentence?

My guess is those refers to functions. But then is this usage correct? Shouldn't it be what in the place of those?

It is referring to those[functions that are attributed to the organs] by Western medicine. You cannot replace "those" with "what"

Maybe I mixed "referred" with "were referred", which are a participle and the predicate verb respectively.
Is the following sentence correct?

Broadly speaking the major internal organs are attributed functions in Chinese medicine that coincide partially with what/those which were accorded to them b

with what which were No.
with what were No.
