This research is on the weight reduction of Taekwondo players.

I think 'the' is used in the sentence, because it refers to a specific weight reduction, that of Taekwondo players, in that sentence (and not considering any other sentence that preceded it or will follow it), is that right?

Well, it would read more naturally as 'This research is on weight reduction in Taekwondo players/practitioners'

(I prefer practitioner, since it is more of a martial art than a sport...isn't it?)

Just to confirm, so the following would work ok too (no gramatical errors?):

"This research is on weight reduction of Taekwondo players."

I think the Taekwondo 'people' in the text were players of a competition.. so in that case maybe players is more appropriate since competition implies sport. But I agree generally speaking practitioners would work better.
