This or that?

Hi all!

I've just created my account here and I'm really excited cause I've found this forum really helpful over the last years, given that grammar books are simply not enough.

So, let me start by asking something which I haven't clearly understood:

Should we always use that when we refer to something we've already said, or this is also correct?

For example:

Young children will benefit by taking up a musical instrument. I say that because.... or One reason for that is that...etc.
