This or it?

Simple question. I've got some problems with these simple things. Could anybody explain how to use it/this/that?
For example: 
"It's a table" or  "These is a table"?
"That is a bird" or "It's a bird"?

What is it? - It`s a table. (somebody has asked you to name the object)
However: This is a table. (these is used with plural only - These are my shoes.)
This is used to point out an object around you which is not far from you.
That is a bird. - The bird is flying high in the sky, it`s nowhere near you, so you use that. (those is the plu

I'm afraid it's not as simple as that. All of these are fine:

What's this? - It's a grapefruit spoon.
What's this? - This is a grapefruit spoon.
This thing here, what is it? - Oh, that's a letter opener.

What's that? - That's an osprey.
What's that? - This? It's my new hat.
That book, whose is it? - Oh, this is mine.
