this fruit is still green

Can we say for a fruit or vegetable which is never green in color that 'this fruit/vegetable is still green' to mean that it is undeveloped yet.

Hi, You could say it, but it sounds a bit odd. Why not just say 'It's not ripe yet'? Best wishes, Clive
