Think That VS Think So

Hello,

What do you think of the difference between think that and think so when they are used at the end of the sentence to refer to something that has been said before them as in the following example:

A: Are you ready?

B: I think so.

C: I think that.

I think that native speakers would say that only B is acceptable in this context. What kind of situations would make one or the other correct?
