Things Chinese vs Chinese things

Hi teachers
I found this sentence in a book, why is it correct 'a'? Shouldn't 'Chinese' be the adjective?
Is it 'b' correct too?
a) I miss all things Chinese.
b) I miss all Chinese things.

But if I say, 'I like Chinese food' is correct. I would nerver say 'I like food Chinese'.

Why here 'Chinese' goes before the noun 'food'? Because it is an adjective. Right?
Why in my original one is the other way around?
