Their exposure to the English language is very minimal.

It would depend if it was written or spoken: spoken, both would be OK. Written, however, the top on "sounds" better to me. "Minimal" would be almost no exposure whereas "limited" would mean more than that.

The first. I agree with the previous post that very does not go well with minimal. Without very, the second sentence sounds fine to me, however.
