I am aware that there is no word as "LIQUIDY" - but would your ears as a native speaker cringe if you heard a doctor say "liquidy food" instead of "tender" or "soft"?
On a personal note, since words like weepy, chocolaty are all in fashion these days, why should we object to liquidy?
The burger was rather liquidy.
Please let me know.
Thanks a lot for your time and effort.

Yes, I cringe. It is a poor coinage.. though it has probably been said before you.

It would not mean 'tender' or 'soft' in any case; it would mean ' runny '.
