I use a capital every time I write the word.

Is there some special case that you are not sure about?

I'd also start 'when' with a capital, in your question.

When referring to the United States and its citizens + Central America and South America. But when talking about attributes of the other countries in the Americas in general, I would use american.

I see these terms.

North American - to refer to countries in North America

Central American - to refer to countries in Central America

South American - to refer to countries in South America

To refer to the whole area, I'd say 'American' in a suitable context,

but to avoid confusion I'd often use some other phrase, eg 'the colonization
