The whites vs. the young

Hi !!!

I need help here! Could anybody tell me why we should say "the whites" and "the blacks" (I have read a text about Apartheid Emotion: wink ) while for the other "classes" of people, we use the article "the" + the adjective in the singular (the young, the blind...)??

When we say something in general we always use the plural form. eg ' I like apples ' Sometimes adjective can be used as a noun. eg ' The young ' = the young people ' The rich ' = the rich people etc .......
