the way of calling your professor directly

I'm writing a review about a class,
but I'm not sure how can I "call my professor" in my article.

I know that if I want to call my profess in class, I can simply say:
"professor!"

But what if I want to mention my professor in writing?
For example,

"_____" have taught me that ....blablabla

Because the review is for that professor to read and I don't
want to use his name directly,
so, could anyone can help me fill the blank?
