Could you please shed some light on these sentences? Do they carry the same meaning?

The final sentence: 'The teacher had us writing an essay ...' is a difficult one and I'm not sure that I agree with your analysis of it. Had is, of course, the past tense form of to have. If I have someone writing a letter, it seems to me that someone is currently writing a letter for me (by my instruction, suggestion, etc.) or that someone is using my space to write a letter. Thus,

It's not an analysis. It's one possible paraphrase specific to the situation described. So do you think had means had (someone) occupied?

The sentence you gave -- 'After many weeks of patient coaxing, Laura finally had the squirrel eating out of her hand' -- does actually fit my original paraphrase as you put it where had meant achieved the result (someone writing a letter, the squirrel eating out of her hand) by instruction, suggestion, coaxing (I didn't mention coaxing, but it is no stretch), etc.

I think The teacher had us writing an essay means We were writing an essay at the teacher's request (suggestion, etc.). It says nothing about whether we finished the essay just that, at some point in the past, the teacher managed to engage us in the exercise of writing an essay.

No. I take the first to mean the task is complete, the second to mean the task was in progress.
