The use of "if"

Hi

Could you please help me understand the use of if here? The speaker had a very unexpected meeting with his friend in a far away graveyard. He hugs him and says:
If anyone ever told me that I'd be meeing you here!

I think it's a bit simpler than that.

If anyone had told me that this would happen, ...
...I would not have believed them.

or

...I would have thought they were nuts.
...I would asked what planet they were from.

It's simply an expression to express GREAT surprise and seeing the person there.
