The talk or the talking?

Is it acceptable to use "the talking" instead of the "the talk"
I found an example on a website like this
"you would have probably heard all the talk about ....."
Can I use the following sentence instead?
"you would have probably heard all the talking about ......"
If they are not interchangeable, please explain the different or any tecnique to remember which one should be used.
