The Swiss, The English

Hello.

I used the adjectives correctly but I am not sure what rules the use of the correct adjectives is based on. Do you use the with The French The Japanese'' and The British'' ''The English only? (in BrE) Don't you also use the word people and adjectives together without the? For example, ''We do a lot of business with Japanese people.'' Or ''People often say that British people are very reserved.'' ''Swiss people are very organized.'' ''I have worked a lot with French people.'' And when you add an 's' is there a particular rule when you add an 's' when you use the and when sh as in Spanish an in American ese in Japanese and ian in Russian?
