1. This cookie is the sweetest I've ever eaten.

2. This cookie is the sweetest among I've ever eaten.

I just feel among or of or something should be added before "I've~' even though #1 looks OK to me.

you shouldn't use "Among" between those two sentences.

in fact, the more formal sentence is "This cookie is the sweetest (one) that/which I've ever eaten", but in less informal speaking, you can omit that/which (relative clauses), because the subjects of the sentences are different ("This Cookie" and "I" are the subjects)
