The three options you gave are what I call "flowery language". Of the three, "the sunshine streaming in" is the least flowery. Perhaps you can just write it as: I enjoy seeing the sunbeam through the skylight.

I wouldn't use either of the last two; neither is an image employed in British English. I know there's no logic
