Why does the phrase "the signing of documents" has to have the definite article?

It does not need the definite article, chihuahua; it depends on the sentence. Can you give us the sentence that you found the phrase in?

The sentence is "This software assists in the signing of contracts".

I know there are easier ways of rephrasing this, but I wish to know the exact reason that the definite article is needed here.

That is precisely what happens, Avangi. 'Signing' is a noun in the 'the signing of contracts' (The signing of contracts is a major part of an actor's life). 'Of contracts' makes the signing specific, hence the definite article. But again, as you say, it is an awkward phrase nowadays and would be better recast as 'This software assists in signing contracts'.
