The rich means a group of people who are rich.
The young means a group of people who are young.
The poor means a group ....
The ......

Q) I was wondering if "the + many other adjectives" can mean the same like the aboves. (e.g., the calm, the happy, the sad, the greedy, the ugly, the handsome....)

In theory, you can construct any group with the "the + adjective" pattern, but in practice, only a relatively few (and these are typically of a sociological nature) are used: the rich, the wealthy, the disabled, the sick, the mentally ill, the poor, the privileged, the underprivileged, the elite, the educated, etc. Ones like: the calm, the happy, the sad, the greedy, the ugly, the handsome, etc.

Yes, they are, but they are not as common, perhaps. The happy are insane. Only the lonely know the way I feel tonight. The greedy go to ****. We are free to form any group we like this way.
