The process of making soft cheese.

The given drawing illustrates how soft cheese is made.


From an overall perspective, there are five main stages in this process, starting with a mixture of milk and water that becomes soft cheese in the last step.


In the first stage, milk is mixed well with water. After that, this mixture is ready for the next step, which is the cooling process. At this stage, milk and water are put into a refrigerated system and continue to mix and lower the temperature to 5 Celsius degrees. After two hours, salt is added and the liquid enters the fermentation, where this mixture is heated constantly for six hours.


At the following stage, this liquid then lets off its steam via evaporation using more heat, which is up to 100 Celsius degrees. After an 8-hour evaporation stage, the mixture becomes a thick liquid and is put to chill at 5 Celsius degrees for 6 hours. In the final stage, wastewater and soft cheese are sorted out via a special filter.
