The position of "not" in the "not...but..." sentence pattern

It matters not how a man dies, but how he lives.

Can I change the above sentence in the following way?

It doesn't matter how a man dies, but how he lives.

One more case:

I relax myself not by playing piano, but by watching movies.
Can I change the above sentence in the following way?

I don't relax myself by playing piano, but by watching movies.
