I have 2 questions:

- is the position of "eventually" in this sentence correct?

- is the sentence grammatically correct overall?

"Not EVENTUALLY having raised a hand and answered my teacher’s questions, even though I knew that I probably know the answer, has happened to me many times."

No. 'eventually' is not used like that.

It means "finally, after some time" or "ultimately but not immediately", and it's very rare to see it with "not", where it most often occurs with "may" or "might". (Microsoft may or may not eventually release Powerpoint for iPad.)
