The policeman was wearing a bullet-proof vest and it was that, that saved his life.

Hello,

is the sentence below correct? Does it sound natural?

The policeman was wearing a bullet-proof vest and it was that, that saved his life.

Btw. would it be more natural to just say The policeman was wearing a bullet-proof vest and it was what saved his life?

The sentences are correct and sound natural; however, I would say, "The policeman was wearing a bullet-proof vest, which saved his life."

It sounds natural when you say it, but it looks strange as written. I would leave out the comma. We don't put commas before relative clauses that start with "that". You could put a comma after 'vest', however.

In the US, the term "bullet-proof vest" sounds a little outdated. This is what they were called in the 1930's. Today you'd more likely hear: a ballistic vest, or body armor, or a kevlar vest, or a flak jacket.
